Recipe For a Picky Eater

My son has been kinda picky with his food lately. At times like this the creativity is needed. Kids usually like simple ingredients, like cheese, or pasta, or chicken. The same time you don't really want to sacrifice a healthy side of the meal. 

I like this recipe because it is easy to prepare, takes about 30 minutes, the portions are perfect size, and it is adult friendly, too:)

Chicken Muffins

You will need:

- 2 medium cooked chicken breasts
- 1 cup of shredded cheese ( I used Mexican Style Four Cheese Blend )
- 1/4 cup of Ranch dressing ( I used Bolthouse Farms Classic Ranch Yogurt Dressing, it is lighter than a regular Ranch)
- 1/2 cup of flour
- 1/2 cup of milk
- 2 medium eggs
- 1/2 cup of finely chopped parsley



What to do:

- Chop chicken breasts into small pieces
- Mix together milk, ranch dressing, flour and eggs



- Heat the oven to 360 F

- In another bowl mix chopped parsley, shredded cheese and chopped chicken breast


- Mix those two together (set approximately 1/3 of the milk, eggs, flour and Ranch mix aside) and spoon the mixture into the muffin pan
- Pour the rest of the liquid mix on top of each "muffin"



- Bake for about 20 minutes
